Who doesn’t love Chocolate AND coconut AND peppermint? Even more irresistible is this healthy and easy to make snack for when you are on the go or looking for a sweet treat later in the evening.
Ingredients (try use organic where possible)
• 1 cup cashews • 1 cup desiccated coconut + extra for the top • 1/2 cup melted coconut oil • 1/4 cup maple syrup or raw honey • 3 heaped teaspoons of raw organic cacao powder • 7-12 drops Peppermint doTerra essential oil (very important you only use a food grade Peppermint oil, like doTerra)
Method
• Add all ingredients into blender or food processor and blitz until combined and smooth • Pour mixture in a tray lined with baking paper and ensure mix is packed down firmly • Lightly score/cut the mix into bite-size pieces (this will make it easier than trying to cut the slice when it has hardened), top with desiccated coconut and place in fridge to set. • Once slice has set, the pieces will easily break off ready for storage • Store in an airtight container in the fridge ENJOY xx
