‘Jodie’s pumpkin soup’

Well the weather certainly calls for hearty meals.

This is my (Jodie’s) simple pumpkin soup recipe. Very delicious.

Ingredients:

Take a pumpkin, grown with love if possible. (THANKS Mum & Dad for this butternut)

1 large onion

Chicken or vegetable stock

Method: Dice the onion and sweat off in butter or oil in a large saucepan.

Fill pot with diced pumpkin of your choice Add stock, cover and bring to boil.

Simmer until pumpkin is soft and squishy. Blend portion sizes in food processor or hi-speed blender until smooth. Serve with parsley and black pepper to garnish.
